Ingredients
- 1 cup (2¾ oz.) 240 ml (80 g) shredded Parmesan cheese
- ½ cup 120 ml olive oil
- 1 tbsp 1 tbsp Dijon mustard
- 1 tsp 1 tsp red wine vinegar
- ½ ½ garlic clove, mincedgarlic cloves, minced
- ¾ oz. 21 g anchovies
- ½ ½ lemon, the juicelemons, the juice
- 1 pinch 1 pinch ground black pepper
- ½ tsp ½ tsp salt

Making low carb simple
Instructions
Instructions are for 4 servings. Please modify as needed.
Add the Parmesan cheese, olive oil, Dijon mustard, red wine vinegar, garlic, anchovies, lemon juice, and black pepper to a small food processor or a tall bowl to use with an immersion blender.
Blend until smooth. Taste and add salt as needed. For a thinner consistency, dilute with water, adding about a teaspoon at a time and blend again to emulsify.
Tip!
Use it as a base for tuna or chicken salad (instead of mayo). Delish!

I made this recipe tonight, but I substituted the olive oil with bacon grease instead. Oh my goodness....it was sooooooooo delicious!!! Tossed the bacon grease ceasar dressing with romaine lettuce and sliced cucumbers, with a bit extra grated parmigiano reggiano .........geeeeeeeeeezzzz it was gooooooooooooood!

Sensational - great fresh flavor. Of course, taking a little extra time to toss and lightly coat each leaf in a big salad bowl before plating makes a big difference too. I'm eating like a king.

UK - The best substitute I've found for anchovies is anchovy paste (comes in a tube). Use as little or as much as you like to get that perfect Casesar-dressing flavor. If you don't like the taste of anchovies, then I'd just use a little more salt to taste.

how much does this make? Also, 33 grams of fat is a lot compared to a store bought brand of 18 grams. If I dont add anchovies what can I add to it?

This makes 4 servings. I am unsure of the total volume it makes. Yes, this is higher fat, which is what we want! Keto is very low carb, high fat. I do not know a good substitute for the anchovies.

Well, this is delicious! I never knew why people didn't like anchovies, they add a great flavour and saltiness to the sauce. SO good. slathered it all over a salad.

Yes, this should freeze well. If the ingredients "separate" when thawed, they can be whisked back together.

Can I ask why regular homemade Caesar dressing with egg yolk isn’t keto? Egg yokes, oil, Parmesan, anchovies, dash of lemon juice, vinegar and garlic.

That's very similar to our recipe. If you're happy with your recipe, there's no need to switch to make this one. We offer many recipes that can also be found elsewhere but sometimes they have our own twist on them, or we like to have them on our website to make it easier to find if it's a component in another recipe on our site.

Absolutely the worst Caesar dressing I've ever had mainly because there's just way too much oil and shredded parmesan with nothing to bind it all together. You absolutely must have an egg yolk or mayonnaise here. And no amount of added water can make a thinner consistency when remember, oil and water don't mix.

Thank you for your feedback. The recipe team re-tested this recipe and updated the instructions to specify that this should be mixed with a high powered device such as an immersion blender or food processor rather than a whisk.
