We love them for parties and game days. They come together so fast and taste absolutely amazing. Kids love to dip them is salsa and guacamole.
Taquitos are one of the few foods my toddler seems to love. These baked beef taquitos are so much healthier than a fried greasy store bought ones.
This recipe is a meal the whole family loved, even the picky toddlers!
Even though they are baked, they are nice and crispy on the outside. The meat and cheese filling is bursting with flavor. Serve these beef taquitos with sour cream and salsa for dipping. A side of guacamole also goes great with this recipe.
We love that these baked beef taquitos are not fried. They are healthier when baked, and your house won’t smell like grease for a week.
Can you use corn tortillas in place of flour tortillas?
Flour tortillas are a favorite when making Taquitos. Mostly because they are so easy to work with and very inexpensive.
If you heat them slightly in the microwave, they bend and fold just like you want them to.
We do the love taste of corn tortillas. When using corn tortillas, they need to be as fresh as possible.
If corn tortillas are not fresh, they tend to crack easily. Then your filling is all over the place.
But you could definitely use them when making taquitos. Just be sure to purchase the freshest ones you can find.

How to make baked beef taquitos:
Here are a few simple ingredients to make a delicious meal your family will love.
- Preheat oven to 400 degrees F. Place hamburger, diced onion, and garlic in a pan and cook over medium heat until beef is browned.
- Drain grease well and add in the salsa, chili powder, salt, and pepper.
- Stir together and cook the mixture over low heat for about 10 minutes.
- Place tortillas on a plate and cover with a damp paper towel. Microwave them for about 30 seconds until warm and pliable.
- Top each tortilla with 1/4 cup of beef mixture. Spread it to about 1 inch of the edge of tortilla and sprinkle with cheese.
- Roll up the tortillas and place them on a foil lined baking dish.
- Brush the tortillas lightly with vegetable oil and bake until filling is heated through and the tortillas are lightly browned (about 8-12 minutes).
- Serve them with sour cream, salsa, and guacamole.

Baked Beef Taquitos Recipe

Ingredients
- 1 pound lean ground beef
- 1 onion minced
- 1 teaspoon minced garlic
- 2 cups salsa divided
- 2 teaspoons chili powder
- ½ teaspoon salt
- ¼ teaspoon pepper
- 10 whole wheat flour tortillas
- 1 cup shredded Mexican cheese blend
Instructions
Preheat the oven to 400 degrees F.
Cook beef and onion in a skillet over medium heat until cooked through; drain excess grease.
Add garlic and cook for an additional minute.
Stir in 1 cup salsa, chili powder, salt and pepper.
Cook mixture over low heat, stirring occasionally, for 10 minutes.
Divide beef mixture evenly between tortillas, spreading down the middle, and sprinkle cheese on top.
Roll up tortillas and place seam side down on a baking sheet lined with foil.
Spray with a light layer of nonstick cooking spray.
Cook for 10 minutes, or until tortillas are golden brown.
Serve with remaining salsa, if desired.

My husband and I made these last night and really enjoyed them. All I had to get at the store were tortillas (I used a corn/whole wheat blend from Mission) and we added a Cayenne pepper in the meat to spice it up (that was my husband actually... it was a tad hot for me). They were easy and different and actually pretty healthy! Will definitely be keeping this one future use!

Thank you ladies! My eldest was over the top when I told him I was going to try this instead of our regular Taco or Tostada Tuesday dinner. I used ground turkey and season using a package taco seasoning but did cheese and baked these next to my roasting spiced up broccoli. Just thaw and then cook as directed in the recipe instructions. (That is if they have never been cooked before freezing). If they were cooked all the way through and then frozen, just thaw and heat in the oven until heated through.
